Cheesy Chili Mac Casserole


  • 2 -24 oz jars of traditional spaghetti sauce

  • 2 tbsp chili powder

  • 16 oz of elbow macaroni cooked and drained

  • 1 pound of ground beef browned

  • 2 cups sharp cheddar cheese

  • 2 cups crushed cheesy Doritos

Add sauce to ground beef and then stir in the 2 tbsp of chili powder. Pour sauce/meat mixture over the elbow macaroni and stir in cheese. Transfer to a 13×9 casserole dish and sprinkle crushed Doritos over the top and bake in a preheated 350-degree oven for 25 minutes. Serve a simple salad on the side.

Stovetop Lasagna

  • 16 oz of pasta cooked and drained

  • 1- 24 oz jar of tomato sauce

  • 1- 16 oz container of large curd cottage cheese

  • 1 lb ground beef browned 

  • 1/4 cup grated Parmesan

  • 1 tbsp parsley

  • 2- cups shredded mozzarella or five cheese blend

salt & pepper to taste

Brown ground beef in a large saucepan and drain fat. Add parmesan, parsley, salt, and pepper to the ground beef. Then pour in your sauce and your noodles. Cook over medium-low heat until it begins to bubble. Serve into bowls and top with desired amount of cheese.

Hearty Turkey Soup

  • 3 lbs ground turkey

  • 1 cup diced onion

  • 2 cups diced carrots

  • 2 cups of chopped escarole or spinach

  • 8-oz dry pasta

  • 4 1/2 tbsp chicken base

  • 1-tbsp garlic powder

  • salt & pepper to taste

In a large stock pot brown 3 lbs of ground turkey. Drain the fat and then add the onion and carrots. Add 12 cups of water to the meat and veggies and stir in your seasoning and chicken base. Simmer on low heat for a half an hour. Rinse the escarole well and add this to the soup pot with the pasta. Continue to cook on low heat for an additional 30 minutes. 

Will serve 16-20 people

Cheeseburger Tater Tot Casserole

  • 1 pound ground beef

  • 1 can cheddar cheese soup

  • 1 cup milk

  • 1 tbsp ketchup

  • 1 bag of tater tots

  • 1 cup of shredded cheddar cheese

  • 1/4 cup of diced onions

  • 1/4 cup of diced green peppers


In a skillet brown your ground beef and drain fat. Add your frozen vegetables to the meat and cook on low for 3-5 minutes. Remove from heat and stir in canned soup, milk and ketchup. In a 13 x 9 casserole dish layer half the bag of tater tots and then pour meat mixture over top sprinkling the shredded cheese evenly over the meat. Top with remaining tater tots and bake in a preheated 350-degree oven for 25-30 minutes.
